My Favourite Recipe – Broccoli Pasta
Ingredients:
300g penne pasta
1 large head of Broccoli cut into florets
¼ - 1/3 Cup olive oil
3-4 cloves garlic (crushed)
1 tsp minced red chilli
Salt and black pepper to taste
Method:
- Bring a large pot of water (with salt and 1tbsp oil added) to the boil
- Add pasta. Bring back to boil for 4-5 minutes
- While pasta is cooking, heat measured quantity of oil in heavy bottomed fry pan, and add garlic and chilli and simmer lightly
- Add broccoli to pasta and return to boil until pasta is al dente
- Strain pasta/broccoli and place back in pot
- Add hot oil, garlic and chilli, stirring gently
- Season to your preferred taste
- Serve with parmesan cheese sprinkled generously on top, and a fresh salad
