My Favourite Recipe – Broccoli Pasta

Ingredients:

300g penne pasta

1 large head of Broccoli cut into florets

¼ - 1/3 Cup olive oil

3-4 cloves garlic (crushed)

1 tsp minced red chilli

Salt and black pepper to taste

Method:

  1. Bring a large pot of water (with salt and 1tbsp oil added) to the boil
  2. Add pasta. Bring back to boil for 4-5 minutes
  3. While pasta is cooking, heat measured quantity of oil in heavy bottomed fry pan, and add garlic and chilli and simmer lightly
  4. Add broccoli to pasta and return to boil until pasta is al dente
  5. Strain pasta/broccoli and place back in pot
  6. Add hot oil, garlic and chilli, stirring gently
  7. Season to your preferred taste
  8. Serve with parmesan cheese sprinkled generously on top, and a fresh salad
