Perhaps you could include the general public in your target audience as this would be a very useful course for anyone wishing to have a better understanding of organic chemistry. I am sure that the many people who read popular science magazines would like to understand some of the terms, and processes. Would this course help with that?
In the assessment strategy it would be good to get some description about the type of formative assessments you could use, and how students could self-assess their progress. You mention exercises so it would be helpful to know the form these might take, for example, short quizzes, interactive diagrams - drag and drop etc.
