I think a lot of members of the community will be willing to help once you get it started. Once you have decided on a meaningful name, just create a page and get started. The page(s) can develop incrementally.
Note that if you have materials in OpenOffice (or Microsoft Word) format, the OOo Converter in the navigation Toolbox can be a good way to kickstart a project. It can get a "rough draft" into the wiki where you (and the community) can refine it.
