Florence Wakhu-Wamunga

Florence M. Wakhu Wamunga has just completed her PhD in Community Resource Management & Extension of Kenyatta University. She has an M.Sc (H.Ec) from Kenyatta University with research in Foods and Nutrition and B.Ed (H.EC). She taught Home Science at Kaimosi Teachers Training College from 1997 - 2001. She is currently a lecturer at Moi University in the department of Family & Consumer Sciences, School of Agriculture & Biotechnology. The courses taught include, Research Methods, Current Issues in Foods and Nutrition, Applied Physics, Nutritional Biochemistry and Physiology, Community Nutrition and Dietary Assessment, Meal Management, Diet Therapy, Experimental Foods, Introductory Nutrition, Nutrtion in the Lifespan, Nutrition and HIV / AIDS, Food Security, Nutritional Survaillance, Programme planning and Evaluation, Seminars in Foods, Nutrition & Dietetics, and curriculum development. Research interests include; Food Security, Child Nutrition and Health, Maternal Nutrition, Geriatic Nutrition, Recipe Formulation, Community Resource Development in Foods and Nutrition, public health, Nutrtion & HIV / AIDS. She has previously done research on development and standardization of recipes for weaning foods. Evaluating street children rehabilitation programmes with the aim of determining the nutritional status of the children. She is currently doing research in, Determining nutritive value of selected foods in Bungoma, Teso and Siaya Districts of Western Kenya, Establishing the nutritional status of children under five years of age in selected households of Bungoma, Teso and Siaya districts of Western Kenya and, Developing soyabean recipes for children under five years of age.
