This makes quite a large amount
Great for lunches.

Ingredients

  • 1 red onion
  • 5+ garlic cloves
  • a hunk of fresh ginger- maybe 2cm x 2cm x 2cm
  • a few teaspoons of turmeric
  • 3 stars of star anise
  • 2 cinamon quills
  • 6 cardamon pods
  • 1 teaspoon of coriander seeds
  • 2 teaspoons of cumin seeds
  • 1 teaspoon of mustard seeds
  • 3 teaspoons of curry powder
  • 3 cups of red lentils- rinse these until the water runs clean
  • 1 can of tomatoes
  • 2 cans of chickpeas- drain and rinse
  • 2 tablespoons of wakame seaweed- chopped (use scissors) to 5 x 10mm pieces (this apparently helps to soften the chickpeas)
  • water
  • salt and pepper



Method

1. Turn stove onto medium low heat
2. Soften the onion, add the garlic, ginger and powdered and seed spices
3. Add the tomatoes, then the washed red lentils with plenty of water
4. Then add the cardamon pods, cinnamon quiills and anise stars (I tie them in a piece of muslin so they can be taken out easily and don't end up in someones mouth!)
5. Add the chickpeas and wakame
6. Stir regularly over a medium heat for ages - until the red lentils lose their shape
7. Season as required with salt and pepper (sometimes I even chuck in a generous dash of Braggs Aminos - kinda like soy sauce)
