I am a Nutritionist. I am a member of Nutrition Society of Nigeria and Nigerian Institute of Food Science and Technology (NIFST).
Brief Introduction
Uchendu Florence is a highly motivated, goal oriented, energetic and knowledge seeking young Lady (LSM). She works at National Open University of Nigeria. See also the NOUN Index with its headquarters at Victoria Island, Lagos, Nigeria.
She is from Neni in Anambra State of Nigeria. A Nutritionist with about twenty years experience on the field. Presently she is a Course Coordinator with National Open University of Nigeria, Lagos, Nigeria.She also coordinates an NGO on HIV/AIDS awareness and education for youths in Secondary and Tertiary Institutions in Nigeria. We partner with Community Based Organizations (CBOs) AND Faith Based Organizations (FBOs) and other stakeholders to get HIV/AIDS awareness and education campaign across to the grass-root.
She is the author of an interesting book titled HIV:All You Must Know (2008)File:HIV Cover page.pdf. She welcomes ideas and collaboration from intelligent and well meaning scholars across the globe.

NUTRITION
Healthy Eating Habits
This consists of four things:
- What is eaten (food choices)
- How the food is eaten (food pattern)
- How the food is bought,
- How the food is cooked. e.g. vegetables etc
Food Choices
- Must be right
- Must be eaten in a way it will bless us and not become a problem to us.
- Discipline, Determination and Dedication (3Ds) must be applied in eating food.
- God created all the foods, none is bad except the inedible ones but they must be chosen and eaten wisely and in moderation. For example in the Garden of Eden, even though God planted mainly fruits, He still instructed man not to eaten one of them.
- You are 50% of what you eat.If you eat right no matter the stress, you will not get diabetes, hypertension, stroke, even if it is hereditary, you can control it.
HIV/AIDS
HIV/AIDS is real. There is no cure for now. It is not written on faces. A carrier might still look very healthy. Abstinence and faithfulness is the watch word.
However, so much progress has been made in the fight against AIDS since it started for real in the developing world less than 10 years ago. The work of the Global Fund, established in 2002, and the President's Emergency Plan for AIDS Relief (PEPFAR), established in 2003, has saved the lives of over six million people with HIV. According to Deborah Dugan, the Chief Executive Officer of (RED), they're alive because they now have access to life-saving anti-retroviral medication -- an impossibility before 2002, when the cost of medication was driven down from between $10,000-$20,000 per year to $350 a year. That cost is now around $150 per year in the developing world -- it costs just 40 cents a day for the medication needed to help someone with HIV stay alive.
