I am very interested in this sort of project. I am an electrical engineer, so naturally my focus is in the science/math fields. Please have a look at these ideas that I put together: http://en.wikiversity.org/wiki/Improving_Technical_Topics_At_Wikiversity . The summary is that these types of things are typically created by only one person with one very limited skill set (the "content expert"), but I claim that instead the content expert needs to be only one in a team of other types of experts to produce effective learning materials.
